How does anyone see underground when it’s so dark? The further down you go the darker it gets. I also fall like a rock and it’s so slow going anywhere and back up unless I get the angle or something right. Is this just how earlier Minecraft is?

pretty much, yes. There was no life in the ocean other than squid, and no underwater temples. I think that all began in 1.8.

If you need visibility in water try using night vision option. Pretty shure speed option isnt viable in water so no luck with that rather than speeding through the surface in an explosive boat.
