Do they differ at all? I made a diamond mortar to shred meteoric steel scrap, but it doesn’t. If they have no difference, what’s the point of having five of them? My guess is that maybe they have different impact on fatigue.

No, it’s just a way of crafting them with different ways (netherite if you start in the nether etc etc), the final product is the same, but has a different texture compared to the other.
